ummm if you lock it with the fob gotta unlock it with the fob (?????)
I must be missing something
If the alarm goes off irrespective of whether you locked it with the fob I'd say something is amiss

1. going to open the doors with it locked + doors aren't actually locked = doors are not locked = alarm system not functioning correctly (or possibly your just door locks)
2. getting in and driving with the alarm going off indicates the alarm system is not properly engaged/functioning because a properly engaged alarm system disables the starter.
It should be noted that you CAN trigger the panic button to make the alarm sound, then get in and drive.....I have done this by mistake while driving and having the fob get jammed against stuff in my pocket and hitting the panic button.
My vote is still malprogrammed

why are you holding the buttons together like that?that is something you do when you have remote start .thats how my remote start works ,you hold both buttons together a few seconds then it starts the car for you .
maybe thats why you are able to open the door and drive it .
you should only be using any 1 button at a given time .lock or unlock .
if your holding both you are doing something totally different.
heres a how to for programming your remote
